 Four generations of Felicetti's have made pasta using exclusively organic agricultural methods, with no chemical fertilizers or sprays. The Felicetti family is committed to produce the finest pasta, taking special
 care to defend healthier eating and a return to the origins by selecting those varieties of wheat that have remained pure since ancient times. This is an important inheritance that today is embodied in the "Selezioni Monograno Valentino Filecetti" project and excellent product: (1) a Scrupulous selection of raw materials; 
(2) craftsmanship according to the methods of the master pasta makers and (3) great attention paid to all 
facets of production. All products are certified organic by Controllo Biologico and Agricoltura Biologica JAS

KAMUT (Triticum Turgidum Turanicum): "A wheat from the past -- that looks towards the future"
 this ancient strain originated in the middle east and was rediscovered and patented  by the American
 farmer, Robert Quinn. This forerunner of modern Durum wheat has a protein content up to 40% higher
 and is extremely rich in vitamins, minerals and amino-acids. It s ideal for light, delicate dressings and is 
excellent with fish based sauces.

FARRO (SPELT)  (Triticum Dicoccum): Spelt wheat was revered since ancient times and its popularity 
continues with all those who appreciate fine quality and delectable taste. A wheat that dates back 
to the ancient Romans; rich in vitamins, mineral salts and vegetable fiber. The Spelt used in these 
products is cultivated in selected fields in Umbria, Italy, where it was cultivated in ancient Roman 
times. Mixed with different sauces it is the perfect dish for the gourmet palate.
